Tex-Mex Yummies

It was another Pinterest-inspired menu tonight.  Delish.  We had crockpot Shredded Beef Tacos and topped them with Guacamole Salsa and both received rave reviews from my table.

The salsa is a twist on salsa verde and guacamole - I would even call it more of a sauce.  I had never bought or cooked with a tomatillo.  They are funny little fruits that resemble a green tomato but are actually a cousin of the gooseberry (thanks Google!).


Chopped em', tossed them in the food processor with the other typical salsa components and then threw in a couple of avocados at the end (recipe only called for one).  The result was a pretty jar of green goodness.  Don't you just love the world wide web?


A nice change of pace from regular salsa or guacamole.  Try it!

Wouldn't You Know...


He's on the move!  

I am with this baby 99.9% of the time.  Of course, it would happen that when I left the house last night for TWO HOURS, Charlie chose that window of time to begin CRAWLING.

That little stinker.

Dusty got to witness it first hand and luckily captured the action on his phone so that I could see it when I got home.  He is still a little wobbly and it is more of an "army crawl", but he's got the right idea!

I guess Charlie felt bad about excluding his Mama from his crawling debut, because tonight he decided to try out a new trick.  This time, I had iPhone in hand and caught it all!

  Now I'm thinking of fitting him with a little helmet until he's ten!

The Pun'kin Patch



Yesterday we made the short drive to Lafayette, Alabama to Jack-O-Lantern Lane.  This was our second year going and we had all looked forward to visiting this working farm to pick out our pumpkins from their home grown patch!

In addition, there's all sorts of other fun to get into.   I believe this was Annie's first time getting her face painted.  Contrary to this expression, she was totally into it!


We took a hayride around the farm...





Then there was the moment that Libby had been waiting for since our visit last October...



THE BUNNY RABBITS.

Oh. My. Word.


They were in heaven!  The bunnies, on the other hand, were probably less than thrilled with all this "love".


And then things got serious.  Can you read these faces?  

"Can we puh-leeeeezzzze take them home?"


Even Charlie supported their case.


Even though we didn't come home with any new furry friends, the kids were beyond thrilled getting to cuddle these fluffy little guys.

Right before we boarded the hayride back to our car, Annie spotted this big daddy and decided it needed to be hers...


She reluctantly agreed to leave it there for other kids to enjoy.


Exhausting fun was had by all!
