It was another Pinterest-inspired menu tonight. Delish. We had crockpot Shredded Beef Tacos and topped them with Guacamole Salsa and both received rave reviews from my table.
The salsa is a twist on salsa verde and guacamole - I would even call it more of a sauce. I had never bought or cooked with a tomatillo. They are funny little fruits that resemble a green tomato but are actually a cousin of the gooseberry (thanks Google!).
Chopped em', tossed them in the food processor with the other typical salsa components and then threw in a couple of avocados at the end (recipe only called for one). The result was a pretty jar of green goodness. Don't you just love the world wide web?
A nice change of pace from regular salsa or guacamole. Try it!
